The Saucy Chef's Homemade Granola.

4 cups Old-fashioned rolled oats
2 cups sweetened shredded coconut
2 cups sliced almonds
1 1/2 cups dried diced apricots
1 cup dried cherries
1 cup dried cranberries
1 cup dried figs or blueberries
3/4 cup vegetable oil
1/2 cup honey
Pre-heat oven to 350
Toss Oats, coconut and almonds together in large bowl. Mix the oil and honey in small bowl. Pour over the oat mixture and stir well, so everything is coated. Pour onto a large sheet [an and bake, stirring occasionally until the mixture turns a nice, even, golden brown. About 45 minutes.
Remove the mixture from the oven and cool, stirring occasionally.
Mix in dried fruit.
Store in air-tight container.
